Honey and lemon salmon fillet with tomato salsa, quinoa and vegetable tabbouleh

Ingredients
4 salmon fillets (120g each)
2 tsp honey
2 lemons
150g quinoa
30g chopped parsley
30g chopped coriander
300g broccoli florets
1 red pepper
200g peas
2 tomatoes
3 spring onions
8 tbsp olive oil
Salt & pepper
Method
1. Rinse quinoa in cold water. Bring 600ml of water to the boil, add quinoa. Stir, cover and simmer for 20 mins. Drain off any excess liquid and leave to stand 5 mins.
2. Preheat the oven to 180 degrees Celsius. Put the salmon on a baking tray lined with baking paper. Squeeze over the juice of 1 lemon and honey; season. Slice the pepper and put on the same baking tray to one side, pour over 2 tbsp olive oil & season. Bake for 15 mins until fish is cooked through.
3. Meanwhile make the salsa and steamed veg. Small dice the tomatoes and slice spring onions. Mix together with 3 tbsp olive oil, 1 wedge of squeezed lemon, a pinch of parsley & season. Steam broccoli and peas for 5 mins (if you don't have a steamer, blanch in salted boiling water for 4 mins).
4. Mix together in a bowl the quinoa, roast pepper, broccoli, peas and fresh cut herbs. Adjust seasoning and drizzle 3 tbsp olive oil. Divide between 4 plates, serve with lemon slices, salmon and tomato salsa.
